Fresh Green Tops and Carmelized Red Onions
Introductory Comments
Are you tossing carrot, daikon and radish tops in the trash or compost? Don't waste all those nutrients! They are luscious sauteed with carmelized red onions. Salute!

2-4 servings
Ingredients
1 1/2 tablespoons organic olive oil
1 organic red onion, sliced half moons
2 teaspoon organic brown rice syrup or agave nectar
Organic green tops of carrot, daikon, radish, sliced immediately before adding to heat
Organic kale, sliced immediately before adding to heat
Organic fresh lemon juice
Organic lemon slices
sea salt
Directions
Heat oil in skillet over medium heat. Add onions and pinch of sea salt . Saute for 2 minutes. Add brown rice syrup or agave nectar and continue to saute until onions carmelizing. Add greens, cover skillet and allow to steam for 5-10 minutes, until greens limp but still bright green Squeeze lemon juice on greens and serve with slice of lemon.
