Pear Waffles
Introductory Comments
These yummy waffles are wholesome and moist. The pear provides wonderful body and they hold up well in any waffle iron.

Ingredients
DRY
2 cups whole wheat pastry flour
1/2 cup semolina flour
2 teaspoons baking powder
1 pinches sea salt
2 pinches cinnamon
WET
1/2 cup safflower oil
1 pear, sliced in quarters
1-2 cups soy or rice milk
1 teaspoon apple cider vinegar
TOPPING (optional)
1 pear, diced
10 strawberries, diced
1/2 cup water
2 tablespoons rice syrup (or more to taste)
2 teaspoons kuzu, dissolved in 2 tablespoons water
Directions
Preheat waffle iron and brush with safflower oil.
Sift dry ingredients together in a bowl. Combine wet ingredients in a blender and puree until well blended. Add dry ingredients and process until combined.
Combine topping ingredents except for kuzu in a small saucepan. Bring to a boil over medium heat. Reduce to a simmer and cook for 5 minutes. Remove from heat and stir in kuzu. Return to heat and stir just until mixture becomes clear again. Top waffles.

Variations
This recipe makes nice pancakes, too.
Use any combination of fruit in the topping. You can add small diced fruit to the waffles, but this may encourage the waffles to stick to the iron.
