Pecan Seitan Gravy

Try this gravy on stuffed squash, millet mashed potatoes, or any other dish reminiscent of down home cooking.

Ingredients
3 cups Seitan Marinade (containing shoyu) or Shiitake Kombu Broth seasoned to taste with shoyu (see
Seitan Marinade)
1 cup cooked Basic Seitan, finely chopped
2 medium organic onions, diced
1 pinch unrefined sea salt, SI brand recommended
1/2 cup organic pecans, toasted and crushed almost to a powder
2 tablespoons organic kuzu, dissolved in 1/4 cup cold water
unpasteurized shoyu, to taste
Directions
Water sauté onions with a pinch of sea salt until they begin to caramelize. Add seitan and pecans and sauté until well blended with the onions. Add Shiitake Kombu Broth seasoned to taste with shoyu or Seitan Marinade, and bring to a boil. Reduce flame and simmer 20–30 minutes. Add diluted kuzu, and heat on a medium flame stirring continuously to thicken (about 10–15 minutes). Add shoyu to taste as needed.
